…I had the privilege of making a surprise birthday cake for a friend…who is a professional cake decorator (she does fantastic cakes)…and it’s a good thing that I didn’t think about that..or I probably would not have been able to do what I did..
1st Tier – Peach colored Briar Rose on a 4.5" English Vanilla Sponge cake with White Chocolate Ganache with Brush Embroidery and Marvelous mold – strands of pearls
2nd Tier – Banana Cake with White Banana Chocolate Ganache painted with food coloring and used the Wilton Baroque Mold for the single strand of pearls
3rd Tier – Organic Peanut Butter Cake with Dark Chocolate Ganache…using the large Rose Cutter from the Wilton Gum Paste Kit and rolled colors of fondant/gum paste (50/50) and folded the petals in half and glued on cake (saw Zoe’s Fancy Cakes Youtube video…and loved it…that’s where I saw the Brush Embroidery, too)…
I used true buttercream frosting for the crumb coats and made homemade marshmallow fondant and added a 1/4 of Wilton fondant…it helps stabilize the fondant in my opinion…
This is my first 3-tier cake…I only realized that when I doweled the cake…and the center dowel disappeared as I used another dowel to push it…
Created a box for delivery using the Liz Marek Youtube video…I slightly changed it…and it works great…
